It's Super Bowl weekend - Go Chiefs!!

SB

----------------

What are you cooking for Super Bowl Party??
A crock pot of beef stew: stew meat, potatoes, onions, celery, carrots, a cup of good tomato sauce, 2 tbsp of flour, butter, bay leaf and salt/pepper. Cook on high 4-6 hrs till meat is tender.

The first trick to a great taste is to BROWN stew meat in a hot skillet in small batches before putting it into the crock pot, make sure skillet is hot and butter is melted; you do not want any meat juices accumulate in the pan (that is boiling, not browning). Second trick is to take time and CARAMELIZE the thin sliced onion, cook it in BUTTER (that's the chemistry behind caramelized onions, it must be butter, not oil), set skillet on medium or medium low towards the end, keep stirring and be patient! you do not want it to burn. It could take 30 min to get that light golden color on onions, and that is flavor gold! At the end, add 2 tbsp flour to onions to make ROUX (thick paste) - cook it 30 sec and add a cup of COLD water or broth to deglaze the pan and make sort of starter gravy; add onions w/ gravy add to crock pot with meat and vegetables and a cup of tomato sauce, add salt, pepper and couple bay leaves.

Hope your Super Bowl party is fun!
